Canadian Style Bacon! August 15 2017
Thought The Original Baconkit was just for regular bacon? Canadian style bacon turns out just as great! Our fellow bacon enthusiast Rikki shares the details below.
"Buy a whole pork loin and trim the exterior fat layer. Your loin may be in the 6.5-7 pound range.
Estimate "about" 5 lbs and cut. I find that cutting 6-8" from the larger end will give me about 3 lbs.
Cut again about 5-7 inches. Check the weight each time. My last one had 2 larger pieces and 1 smaller one.
Follow the standard instructions included with The Original Baconkit EXCEPT I limit or do not use the maple sugar at all (because I watch my sugar intake).
Choose the thickest part of the meat to insert your temperature probe and CHECK IT with a regular thermometer as the pop out sometimes gets stuck. It's great, probably the best Canadian (back) bacon anywhere!"

Peppered bacon with The Original Baconkit. July 20 2017
Bacon bacon bacon. Original, smoked, peppered, maple flavored, there are so many options. In this article, we describe how to make peppered bacon at home.
First things first. Get our baconkit. It'll give you everything you need to make awesome bacon with that pork belly you get at a local butcher shop or meat department at a local grocery store.
Get the instructions sheet out. Step 1 is to get our pink curing salt (not to be confused with regular table salt! it won't work!) and put it in the curing bag along with the optional maple sugar. This is where we intercept to make peppered bacon.
Put the provided curing salt and the maple sugar in a mixing bowl. Add about 2 tablespoons of coarsely ground black pepper (you can use more ground pepper if you are true a pepper enthusiast but using less likely won't deliver the desired results). Mix well. Once done, spread and rub the mixture all over the pork belly, put it in the curing bag, and then put the curing back with the prepared pork belly in the refrigerator. Follow the rest of the instructions as described and you'll have awesome homemade peppered bacon in about 7 days. Enjoy!
